March 7, 2010. This meat was fantastic. Great flavor. I had a little trouble getting it cooked just right. The cookbook is written for a gas grill which means that some of the cooking times have to be adjusted. I cooked a 7-8 pound boneless prime rib roast for about 1 1/2 hours which was just about right. The recipe says 2 1/2 hours over medium heat for a roast of 10-12 pounds. I also made baked potatos and grilled asparagus. Both are always a hit. The potatoes were nice and tender. I rubbed them with olive oil and Kosher salt before wrapping them in al foil.

Prime Rib, asparagus, roast potatoes - the whole thing was delicious. The spices in the rub are fine, but were not the key to this meal - rather, it was just a matter of good meat and good grilling, so go ahead and use whatever rub you like. But do try grilling asparagus, and little new potatoes...
